KECAP MANIS FRIED RICE

I didn’t think it was odd to eat rice for breakfast until I lived away from South East Asia.   Back home in Manila,  even fast food franchises serve them with their morning value meals.   Mark prefers good ole cereal and toast for brekkie, so we just split the scrambled eggs between us and prepare our first noms for the day separately.  Crow, my 11-month old baby, favors his daddy’s food too, the little traitor.  Snubs my plate completely.

 

Occasionally,  I stir-fry some veggies and sausages with white or brown rice.  Kecap Manis soy sauce packs a wallop of sweet-salty flavor to the dish, and combines beautifully with the garlic and onions.  The idea of eating a bowl of this makes Mark gag,  but I revel in it.  Too rich for his blander taste for 7am food, so I put away the leftovers in a bento box or stainless steel container, and he enjoys them at lunch time instead.

INGREDIENTS:

500g Rice, cooked (chilled overnight)
5 Chinese Sausages, sliced diagonally
1 TSP. Garlic, crushed
1 medium-sized Onion
2 TBSP. Lemon Grass
1 cup Corn Kernels, canned or frozen
1 cup Veggies, frozen
Kecap Manis Soy Sauce
1 TSP. Oregano
Shao Xing Cooking Wine
Light soy sauce
Salt & Pepper

INSTRUCTIONS:

Slice the sausages into strips, diagonally.  Slice the onions however you want.  You can dice ‘em too, I can’t be bothered unless it’s for salsa.
Pan-fry the sausages in a pan or wok  until crispy golden brown, then place in a bowl & set aside for use later.
Reduce the oil in the pan/wok since frying the sausages produced more grease due to the heating of its fatty bits.

In the same pan/wok, cook the garlic and onion until the onion is translucent.

Add in the chilled rice.  And mix like a mad person.  The mad part is optional.
Throw in the frozen veggies.  Blend it all together.
Dump in the corn kernels.  And move around that spatula once again.

Flavor with Kecap Manis soy sauce to suit your taste.
Splash some Shao Xing cooking wine in.  I did 2 splashes.

Sprinkle on the oregano.  Scoop some lemon grass, and spoon them in.

Grab the bowl of Chinese sausages and add it to the fried rice mixture too.
I usually wait until the last minute so the sausage will retain its crispy-liciousness.
Season with light soy sauce, salt & pepper.
